For those who don’t know, an emergency ration bar is a food designed to keep you alive during some sort of survival scenario. Emergency ration bars have a very long shelf life, but most importantly, they are calorically dense. Typically, one bar has several hundred calories, which makes them ideal for bug out bags or survival caches.

There are a couple of downsides to store-bought ration bars, though. They usually don’t taste very good, and they’re not very nutritious. In fact, you could say they’re downright unhealthy, since the ingredients are mostly flour, sugar, and shortening. Yes, they’ll keep you alive, but you probably won’t feel well.

That’s why I recommend making your own emergency ration bars at home. You can buy them on Amazon, but if you make them yourself, you can control the ingredients and make sure you’re getting what your body actually needs to stay healthy. Plus, you’ll save some money.

This particular recipe is one of my favorites because, unlike typical ration bars, these are actually good for you. They don’t have a lot of sugar (although they’re still sweet), they’re loaded with protein, and they taste great.

Ingredients

Dry Bowl:

  • 6 cups of oats (1,800 calories)
  • 2 Tbsp of chia seeds (140 calories)
  • 3 Tbsp of hemp flour (60 calories) or almond flour (120 calories)
  • 2 Tbsp of fruit powder (optional)
  • 6 scoops of protein powder (720 calories)

Wet Bowl:

  • 1 cup of honey (1,000 calories)
  • 1 cup of coconut oil (1,900 calories)
  • 10 to 12 heaping Tbsp of peanut butter (1,000 calories)

This makes 12 bars at roughly 550 calories each.

Instructions

1. Mix the dry ingredients

Combine the oats, chia seeds, hemp or almond flour, fruit powder, and protein powder in a large bowl. Stir well and break up any clumps of protein powder with a fork or your fingers as you go.

Protein powder tends to clump, and you want it distributed evenly so every bar gets its share instead of leaving pockets of dry powder in the finished mix. Give it a good stir until the color looks uniform.

2. Melt and combine the wet ingredients

Add the honey, coconut oil, and peanut butter to a separate microwave-safe bowl. Coconut oil is solid at room temperature and needs to be warmed to liquid before it will blend, so microwave the bowl in short bursts. Try 25 seconds, stir, another 25 seconds, stir, and repeat until you have a smooth, consistent liquid with no lumps.

Work in short intervals rather than one long blast. Honey scorches easily when it gets too hot, and overheating can turn it bitter, so heat it just enough to loosen everything up. When it’s done, the wet mixture should pour like a thick syrup.

3. Combine wet and dry

Pour the wet ingredients into the dry bowl and mix everything together thoroughly. A sturdy spoon or spatula works best here, and you may need to press and fold the mixture to coat all the oats. Move fairly quickly, because as the coconut oil cools it starts to firm back up and the mixture gets harder to work.

The finished texture should be hard yet crumbly, a little like wet sand that holds together when you squeeze it. If it seems too dry to hold a shape at all, add another spoonful of peanut butter or a little more honey. If it’s too loose and wet, stir in a handful more oats.

4. Form the bars

Use a 12-cup muffin pan to form the mixture into bars. Line the cups with paper liners or use a silicone muffin pan if you have one, since the bars can be tough to pop out of a bare metal tin once they’re cold. Press the mixture firmly into each cup with the back of a spoon or your fingers. Packing it down hard is important. Loosely filled cups will crumble apart, while firmly pressed ones hold their shape.

Put the pan in the freezer for about 12 hours. The cold sets the coconut oil, which is what binds everything into a solid bar.

5. Store or eat

Once they’re frozen solid, pop the bars out of the pan. From here you can eat them right away or store them for later. For everyday use, keep them in a Ziploc bag in the freezer or fridge and eat them within a few weeks.

For long-term storage, vacuum-seal each bar and keep it in a cool, dark location. Adding an oxygen absorber to each package will help them last even longer by slowing the oxidation that turns fats rancid. More on realistic shelf life below.

Tips for Success

  • Taste before you commit. Do a small test batch first and adjust the sweetness, the protein flavor, and the add-ins to your liking. It’s much easier to tweak a small batch than to make a giant one you don’t enjoy eating.
  • Choose your protein powder carefully. The flavor of your protein powder carries through to the finished bar, so pick one you actually like. Vanilla and chocolate both work well as a base.
  • Mind your peanut butter. Natural peanut butter (just peanuts and salt) keeps the sugar down, but it separates and can make the mix oilier. Stir it well before measuring. No-stir or conventional peanut butter is a little easier to work with.
  • Don’t skip pressing them down. The single most common reason these bars fall apart is under-packing the muffin cups. Press hard.

How to Store Them for the Long Term

Coconut oil is the key to how these bars behave in storage. It stays firm when cool but softens and can melt in the heat, so keep the bars somewhere cool and dark no matter which method you use. A hot bug out bag left in a car trunk in summer will turn these into a greasy mess.

The best long-term setup is to vacuum-seal each bar individually and drop in an oxygen absorber before sealing. Sealing them one at a time means you can open and eat a single bar without exposing the whole batch to air. Store the sealed bars in a cool pantry, basement, or another spot that stays consistently cool.

For medium-term storage, the freezer is your friend. Frozen bars in a Ziploc will keep well for months, and freezing does the double duty of keeping the coconut oil firm.

A Realistic Note on Shelf Life

Be honest with yourself about how long homemade bars will actually last. Commercial ration bars are engineered and sealed to survive for years, and homemade versions won’t match that. Honey is a natural preservative and helps, but peanut butter, coconut oil, and the fats in nuts and seeds all go rancid over time, especially when exposed to heat, light, and air.

Vacuum-sealed with an oxygen absorber in a cool, dark spot, you can reasonably expect these to stay good for six and possibly much longer. The cooler the temperature, the longer they’ll last. Treat them as a rotating supply rather than a set-and-forget cache.

Label each batch with the date you made it, work them into your regular snacks or lunches, and make a fresh batch every few months. That way nothing sits long enough to spoil, and you always have a fresh supply ready to go.

Variations

One of the best things about making your own is that you can customize them endlessly. A few ideas:

  • Swap the nut butter. Almond butter, cashew butter, or sunflower seed butter all work in place of peanut butter. Sunflower seed butter is a good pick if you need a nut-free version for allergies.
  • Add texture and flavor. Stir in shredded coconut, chopped nuts, sunflower or pumpkin seeds, or cacao nibs for crunch. A spoonful of cocoa powder or a shake of cinnamon adds flavor without adding sugar.
  • Bump the fruit. Dried cranberries, raisins, or chopped dried apricots add natural sweetness and a little variety. Keep the pieces small so the bars still hold together.
  • Adjust the sweetness. Swap some or all of the honey for maple syrup, or cut the honey back if you like them less sweet. Just keep in mind that honey is doing some of the binding and preserving work, so don’t remove it entirely.
  • Make them vegan. Use a plant-based protein powder and swap the honey for maple syrup or agave.

I did the math and found that these bars come to about 550 calories each, which is pretty good, especially since they’re not loaded with lots of sugar like most ration bars. Make a batch, tweak the recipe until it’s exactly how you like it, and you’ll have a survival food that actually keeps you healthy instead of just alive. Enjoy!
